Forskere kan nu "se" ind i vores mad med avancerede mikroskoper. Derfor kan de finde ud af, hvordan vand, fedtstoffer, proteiner og kulhydrater sidder i maden - for eksempel i ost, flødeskum, marengs og smør. Det giver mere viden om, hvordan maden får sin smag.
